What a weekend!!! I was fortunate enough to be invited to dinner by friends both Saturday night and tonight to celebrate my birthday! As much as I love to cook and provide delicious food to my friends and family, it was so nice to sit down and have a wonderful dinner placed in front of me.
Saturday night was Mexican and I enjoyed one of my all time Mexican favorites-Ceviche!!! There’s this little Mexican grill near Chapel Hill that has great food. The menu consists of typical American-Mexican fare but they do offer authentic tacos and prepare ceviche as a special on the weekends. It is divine! Fish cooked in lemon juice, then mixed with lime juice, tomatoes cilantro and spices and served over a crunchy tostada. They also prepare their own flour chips for dipping into homemade salsas. Wonderful! And I didn’t have to do dishes afterward which made dinner that much more enjoyable.
Tonight I was lucky enough to be invited out for Sushi and Thai food. Larb for an appetizer, which is always a treat to me and a big boat of sushi which I shared. All the fish was so unbelievably fresh and I think the salmon may have been some of the best I have ever had. The boat had rolls, sushi and sashimi and a little seaweed salad. Perfect.
Asian food is my absolute favorite and I think I could literally eat it every day of the week. The options are endless…noodles, soups, salads, rolls, banh mi, satays, curries, rice dishes…the list goes on. I’ll try to mix in some Asian food this week, but without being able to visit the Asian market, I’m somewhat limited, but I’m sure I can pull something together that you will enjoy preparing at home.
