After what seemed like the longest week ever, last night I was so totally exhausted. I needed something quick and easy for dinner. Normally I would have stopped by the grocery for something to throw together quickly, but since I am only two weeks into 30 days without groceries, the pantry will have to do.
I grabbed a piece of cod out of the freezer along with some green peas (love green peas!!!). While the cod was marinating in light soy and oyster sauce, I went out to the garden for some fresh small kale leaves. I thinly sliced an onion and minced some garlic and ginger. This is what I consider the perfect meal, simple ingredients, easy to prepare yet flavor packed and healthy.
First I sautéed the onions just until soft in a little grapeseed oil and removed them from the pan. I added the kale along with the ginger and garlic and sautéed just until wilted but with some crunch left in the stems; removed that from the pan and placed with the onions. Then I added the cod to the same pan and seared until beautifully caramelized and cooked through. While the cod was cooking, I zapped the peas in the microwave.
All this I placed on top of bun noodles, added a little more soy sauce and hoisin sauce, and just a few drops of sriracha to give it a little kick.
